Dry-Sear the MushroomsHeat a large skillet over high heat. Add the mushrooms without any oil.Let them release their moisture completely. Once the liquid has evaporated, continue cooking until the mushrooms become deeply golden brown with caramelized edges.Avoid stirring too often so they can develop a rich crust. Season & CaramelizeSprinkle the mushrooms with the salt and sugar.Cook for another minute until they begin to caramelize slightly and develop a glossy surface. DeglazeAdd the soy sauce, Worcestershire sauce, and a small splash of water.Stir well, scraping up all the browned bits from the bottom of the pan. Let the liquid reduce until it forms a light, glossy glaze. Finish with Butter & GarlicAdd the butter and minced garlicToss everything together until the butter melts, gently foams, and coats the mushrooms in a silky, glossy sauce. ServeFinish with freshly ground black pepper and chopped parsley.Serve immediately while hot
- Don't let the butter reduce completely
- Add the parsley only at the very end
- Use coarsely ground black pepper
- Let the mushrooms brown deeply
